Fall weather makes me HAPPY

As I am sitting here thinking about what I am going to write about, a nice breeze starts blowing in the window. This weather totally reminds me of when I was younger and of course volleyball season & football season. I particularly do not enjoy watching football  but I do know I LOVED going to my high school football games. Did I watch the games? Nope.. I ran around and chased boys!

As I was walking my dog I was thinking about why I enjoy this time of the year so much. I came up with a few things that I will share with you. The smell of "fall leaves"in the air with the crisp breeze blowing is delightful. The sight of the leaves changes colors and the clouds in the sky slowly moving and looking rather unique is peaceful. The fact that I get to wear hooded sweatshirts, rocks! Sleeping with the windows open makes me feel in tune with nature. Bon fires have an awful smell, but boy they are a lot of fun! The taste of chili is a gift to the taste buds. Apple cider does not taste as good during any other season. Pumpkin carving is not only a great family bonding event, the pumpkin seeds in the middle are a rather tasty snack! Wearing my nice fall jacket is very comfortable. My hair always looks better during the fall. The humidity is GONE, sigh. I can finally rock my boots again, yeeehaa! I get to spend more time in the kitchen, watch out world! The corn that grows from the earth is a gift from god and a very versatile fall crop. Candles sales increase and my house finally smells good. Finally, I get to turn my ac off, my check book is very happy about that.

I have been spending a lot of more time in the kitchen lately and getting in touch with my "crafty" side. Now that I have been a vegetarian for more than a year, but been practicing for a few years, I am starting to learn a lot about my body. Becoming a vegetarian does more good than you might ever know. As I have been meat free, I feel myself starting to be more in tune with nature. I feel myself with more energy. I feel my body telling me when I am low on fuel or when I have had a little to much fun, I pay for it. I feel more energized with certain foods I eat. I feel my stomach hurt if I give in and have a piece of cheese. My skin feels soft and clear. I am learning how to listen to my body and eat what I need in order to feel great and look great, inside and out. This type of mind body connection is only noticed once we start to focus on our body and detox the junk out. Try and see if you can listen to your body and hear what it is telling you. I promise, once you learn how to "listen" your life will be much more enjoyable.

 Before my vegetarian journey I would suffer from frequent head aches, several canker sores in the mouth, cold sores on the outside of my mouth, sickness, acne and frequent random stomach pain. I honestly thought I just had to suffer with all these problems, I thought I was just born that way. I am here to tell you to re -think that! If you suffer from any of the things I listed, your diet change is a must. I would have several canker sores in my mouth at one time and be in severe pain. I can remember gargling salt water, going through tubes of ora gel and avoiding oranges because the acid in the fruit would hurt to eat. Wow, just thinking about those days makes my mouth hurt!! Please consider looking at your diet and and listing the things you suffer from on a daily basis. I am not a doctor, nor do I clam to be. Something I can almost promise you is this; if you cut out the crap in your diet, your  painful symptoms will slowly start to melt away!  I would encourage you buying the book, "You Are What You Eat". Dr. Gillian does an outstanding job of explaining how to listen to your body, she recommends supplements that you might be lacking in your diet for each symptom as well.

 P.S Panera has avocado on their menu now! I am thrilled. :) Panera is one of my few, vegan friendly restaurants... they do not have an extensive list of vegan food, primarily salad, however they are healthly and I like that.  :)

Day 3 Vegan Kickstart!!

 While I was searching around on the PCRM website, I found this delicious recipe and I wanted to share it with you!

DR. ESSELSTYN'S RECIPES


Mango-Lime Bean Salad
Makes 2 servings

1 mango, peeled and diced

1 small red onion, diced to taste (start with 1/2)

1 15-ounce can cannellini beans, drained and rinsed

zest of 1 lime

1 juicy lime, squeezed

cilantro, a lot, 1/2 cup or more
Combine all ingredients. Serve on a bed of baby lettuce.

JIF REDUCED FAT PEANUT BUTTER  

Something that really drives me bonkers is JIF peanut butter commercials. Their slogan is "choosy moms chose Jif"" right?! Well let me go ahead and show you what these choosy moms are feeding their children!!


Ingredients: Reduced Fat Jif Crunchy- peanuts, corn syrup solids, sugar and soy protein, fully hydrogenated vegetable oils ( rapeseed and soybean) salt, mono-and diglycerides, molasses, niacinamide, folic acid, pyridoxine, hydrochloride, magnesium oxide,zinc oxide, ferric orthophosphate and copper sulfate. WOW .. if that list doesn't scare you, I surely don't know what does!! On the jar is says "with real peanut taste" .. I don't know about you but I would prefer real peanuts as the main and only ingredient rather than a peanut, man made, chemical taste.
All natural peanut butter ingredients: dry roasted peanuts.

I don't think it takes a rocket scientist to determine what these choosy moms, should choose!

21-Day Vegan Kickstart!

  So a friend of mine told me about this awesome kickstart program and I really want to share my journey with you, everyday! It is a 21-Day vegan diet program for vegetarians looking to transition to vegan or for people who eat meat to investigate the vega lifestyle and start to feel great and lose weight to! With this program, they send you so many helpful & motivating tools such as webcast's, diet plans, phone calls, articles and so much more! The best thing about this program, I think, is that they plan out your entire diet, everyday, every meal and also make a grocery shopping list that allows you to purchase everything you will need for the dish's! Now of course you will need to go to the store more than just once ... this is  21 day program! :) I am already, almost vegan but I am excited to try all these new awesome recipes and encourage you to join me!

Holiday Weekend

Happy Monday off work! I don't know about you but I love long holiday weekends. The first thing that comes to my mind when I think about the holidays is FOOD!! Just because I am veg, let me tell you, I love food! I will show you a few food items that I had this weekend that I thought were awesome and I will also share a not so good experience!!

Kuma's: I have to give this restaurant some major love, their food is to die for. Jaime and I took the pup over to Naperville on Saturday morning and cheered on some of my Chamber friends at the annual bed races. I have been trying to get Jaime to go with me to Kuma's but because of work conflicts, we have not been able to go! Well, Saturday we went! When Jaime says something is awesome, I know it must be pretty great!  He  honesly never says food is awesome unless it is a dish that his mom has cooked! :) I ordered the Papaya Salad with medium hotness! Check it out!

This salad is refreshingly filled with thin slices of carrot, bean sprouts, papaya, cucumber and possibly celery! They add peanuts, tomato's,onions, cilantro and they also give a side of brown rice. The dressing is is best part and I honestly have no idea what they use. It is spicy, sweet, refreshing and a tad sour! I am going to start playing in the kitchen and trying to create my own version because it is so very delicious and PERFECT for the summer/fall!


Weddings are always fun to go to esp when family is involved! Saturday I attending a wedding and because Jaime had to work, I was riding solo!! Driving in the car on the way to the wedding, Jaime's brother in-law was asking me about my blog! I was thrilled to hear that he had checked it out and that he was pretty interested in what I had to say!! Sweet!! I began to tell him a little about my goals in mind and also why decided to start blogging in general. I said to him, " I bet you tonight at the wedding they will serve nothing that I can eat besides possibly a salad to start the meal off"  Guess what... I was unfortunately right!

The key to success when your a veg is to pack your own foods and be prepared to starve! haha, no I am kidding about the starving part! I did have a small spoon full of corn which I was ok with because now I can do the corn test ! :) I did have a small bag of cashwes, pumpkin seeds and alomnds in my purse.. but I forgot it out in the car! Oh well! My advise to you when somthing like this happens is simply to drink a lot of water. Water is such a great hunger reducer and body cleanser so yup, I had about 10 glasses of water that night and had a great time!! :) Now because this was a wedding and the bride and groom had the decision to choose what type of food they wanted to serve, I didnt feel that it was apprpriate to say anything. However, everyone at my table clearly got the hint that I would have liked to have seen more than just 1 vegetable at the table. :)

never the less, I had a great time :)

Fall time means SOUP time!! There is one more AWESOME dish that I would like to share with you! Sunday evening I was looking in the pantry searching for something to eat and this is what I found!!

Pure awesomeness and quick!!

I forgot that I had bought this a few weeks ago at Fruitful Yield. All I did was pour 2 cups into a sauce pan on the stove, added a few small red potato's, shallots & crushed red pepper. It was very good! I enjoy juicing my own fresh fruits and veggies, but I have yet to make a soup. This has given me a great idea to juice my own next time!  :) If you enjoy your soups hearty, this is a great base to start with. You can easily just add several veggies, rice and or beans to it and there you have a thick, hearty soup!

Crazy Bird

Starbucks:  One of the worlds largest coffee company's and one of the most health conscious coffee company's at that, I am very surprised they do not offer almond milk as an option for lattes.  I love meeting clients there early in the morning, (especially once the fall and winter roll around)  and I particularly enjoy the Vanilla Rooibus hot tea latte. Because I do not consume dairy products, of course I ask what options of milk of they have. The barista looked at me like I was a crazy bird and hesitantly replied I think we have soy?? When I got that answer, I knew better than to ask if they had almond milk by chance... but I did anyway. Her reply "ALMOND MILK?? UM.. NO WE DONT...( with another crazy bird look)" So I went ahead and ordered the tea with soy milk and I went on my way without leaving any complaints behind.
